Step 1

Pit the dates and add to a food processor with the pistachios, cashews, pumpkin seeds and matcha powder. Blend together until smooth. Add in 1-2 tbsp of water as you blend (you'll only need this if your dates are harder or if it won’t come together into a soft ball).

I use a vegan, 70% cocoa solids dark chocolate. To help to coat the balls with the chocolate more easily, add an optional 1 tsp of coconut oil to the melted chocolate. Store in the fridge, they will last for 8-10 days. They also freeze well. *This post contains affiliate links.
